Vegan Eggplant Unagi “Eel”


Am I depressed…

1) Instant Pot, Saute More: Boil 2 cups water

2) Slice eggplant into 1″ thick slabs. Put in bowl, put bowl in Instant Pot water, and steam for 10 min.

3) Make sauce while waiting. Serving Bowl – Add:

– 1/2 tbs kelp powder, 2 tbs soy sauce, 1 tbs maple syrup, sprinkle coconut sugar

4) Medium Sauce/Frying Pan,  medium heat: Heat oil then pan fry eggplant on each side to golden.

5) Drizzle with sauce. Omg wtf it’s so good. I feel less sad now

*I didn’t have mirin/cooking wine but you should add 3 tbs at step #3 if you have any
