Vegan Chiknless Veggie & Rice soup (holy moly I’m cured)

Reminiscent of Italian penicillin or American chicken noodle soup

Notes 4 next time: add cubed x firm tofu at step #2.

0) Have leftover rice or cook it now. I used white jasmine rice.

1) Instant Pot, Saute on Medium. Add:

– 2 tbs palm fruit shortening or other fat

2) Chunky chop & add:

– 1 yellow onion

– 4 carrots

– 2 potatoes

– 3 cloves minced garlic

3) Add spices:

  • Dried oregano
  • Dried rosemary
  • Dried thyme
  • Ground black pepper
  • A sprinkle of fennel seeds
  • Sprinkle of red pepper flakes

4) Mix real good. Put lid on and cook & mix till onions start softening like 2 min.

5) Saute on High. Add:

  • heaping spoonful nooch
  • 2 not chik’n bouillon cubes
  • salt
  • Water to cover everything

6) Put lid on and seal. Let the steam cap come up. Then, turn off and wait for pressure to release naturally.

7) Microwave cooked rice, add chopped parsley to bowl, then spoon soup on top. Top with lemon juice.

Store with soup and rice separate so rice doesn’t get overly mushy.

This is a great way to use up shitty pasta water rice that is simultaneously undercooked and mushy. Just let the rice sit in soup for like 10 min and then zap in microwave for 2 min so that everything becomes yummily homogenized into the soup. Innovation.
